Spiced Bellini

The perfect drink to soften the blow of autumn onset. This is a sweet twist on a classic drink with a mild poke of spice.

Yield: 3 cocktails

Prep Time: 20 minutes + cool time. If you don't have time to cool the plum mixture use a couple of ice cubes to speed up the process. It's also handy if you store your vodka in the freezer!

Ingredients:

  • 60 ml or 2 oz vodka
  • Processco
  • 3 chopped plums
  • 15 g or 0.5 oz light brown Muscovado sugar
  • 2 cm piece of root ginger
  • 6 peppercorns

Instructions:

  1. Add the plums, sugar, ginger and peppercorns to a pan with 100ml of water and simmer for around 10 or so minutes until the plumy mixture has thickened and is nice and pulpy.  The longer you leave it hubbling the more spice infused it will become.
  2. Pour the juice through a sieve into a jug and use a spoon to squeeze out as much liquid as possible.
  3. Add the vodka and if you have the time chill the spicy, plum juice or else add an ice-cube or two.
  4. Fill about half of each glass up with the vodka and plum mix (assuming your glasses are relatively small in size) and then top with Prosecco.
  5. Serve.
